Another tip: You can turn any of the wraps below into sandwiches, and vice versa.
These easy Hummus, Cucumber, and Avocado Wraps are as good for dinner as they are for lunch (or even breakfast, for that matter …). You can use homemade hummus or store-bought; either way, it’s made in minutes. For lunch, serve with plenty of fruit; for dinner, serve with soup and/or a simple side dish.
Asian-Flavored Quinoa Wraps, contributed by Wendy Polisi, are chock-full of yummy and healthy ingredients, including carrots, avocado, and leafy greens. They come together quickly once you have the cooked quinoa on hand. See photo of finished wrap at top.
Sometimes, two shortcuts are better than one, and that’s definitely true for these tasty Baked Tofu and Peanut Satay Wraps. Using precut coleslaw and prepared peanut satay sauce means that these can be ready to eat in 10 minutes or less.

Sharon’s Chickpea Salad or Sandwich Spread by Sharon Nazarian is super easy and completely delicious; it takes only about 15 minutes to make, and there are so many ways to serve it — as a sandwich, appetizer, or dolloped into a lettuce leaf.
